1. [Science |ย Reports] ๐ŸฉธYour Blood Tells the Truth

Itโ€™s a common belief: eating less meat means risking nutrient deficiencies.

But a new Swedish study shows:

Plant-rich diets with lower climate impact can still meet your nutrient needs.

Researchers tracked 26,000 people and checked not just what they ate, but how it showed up in their blood.

Despite slightly lower intake of some micronutrients, overall nutrient status remained stable.

The bottom line?

Sustainable eating works โ€“ when carefully planned.

2. [Food for Thought] ๐ŸŒถ๏ธ The Rise of K-Food

Earlier this year, at the Food Innovation Conference hosted by the Gottlieb Duttweiler Institute (GDI), I met Oxford Professor Jieun Kiaer, an expert in Korean linguistics and culture.

While she spoke about the global rise of Korean culture, her daughter quietly prepared fresh gimbap (Korean sushi) for the group. What an experience!

GDI has since published a great piece on how Korea has become a cultural export powerhouse โ€” and how food is its next big ambassador.

Instant ramyeon and fire noodles have gone viral. The spicy sauce gochujang now lines the shelves of major European supermarkets. And fermented classics like kimchi are being rebranded as gut-health heroes in the wellness world.

3. [People & Startups] ๐Ÿ“Mapping the Future of Protein

Itโ€™s easy to feel lost in the alt protein landscape.

But this re-designed map by the Good Food Institute makes the invisible visible. I really like it!

You can clearly see where innovation is clustering: from research labs in Israel, to startups in the Bay Area, to public funding hubs in the Nordics.

4. [Recommendation] ๐Ÿ›๏ธ Future Food Exhibition in London

The Science Museum in London has opened Future of Food โ€” a new exhibition exploring food not just as culture, but as a question of survival.

At the heart of it: the Planetary Health Diet, a concept for a diet that prvides health to people and planet.

The exhibition runs until January 2026.
